Hi everyone!

Sorry, no new recipe tonight, just good ole spaghetti, meatballs, salad, and garlic bread over here!  After some crazy Olympic country meals, it's nice to have a relaxing week.  Don't worry, though, I'll be back tomorrow with a Wicked Cheap Wednesday meal:)

So this week I'm thinking about what "stuff" I wish I either could make, or could make better:

1.  sushi!
2.  mashed potatoes - I just can't get them right!  What would be even better is garlic mashed potatoes like at TGI Friday's!
3.  chocolate mousse - how the heck do you separate the whites and yolks from eggs correctly??


What do you wish you could make in general or better?  Also, when you have frozen leftovers, like ground pork, turkey, etc, what are your best go-to recipes when you're trying to use up what's in the freezer??

I'm off to clean out my scrapbooking tote - it's a disaster after Croptopia this weekend!  See you tomorrow night!  I also have to get some pictures of my new pages up - all in good time:)

Oh!  Who's psyched about the dwts new lineup?  What about Jake and Vienna?  Sorry, tv blogging;)

Night 13 of Olympic Meals - Japan!

Sorry for the late post, everyone - I fell asleep last night about 9:30 - this Olympic late night-ness is getting to me!  I must be getting old!  Anyways, I hope you enjoy this post and the next (for tonight's meal) - unfortunately they'll be quick, as I must pack for my and Melissa's Croptopia getaway!  Scrapbooking alll weekend, woohoo!  Should be fun, but I will miss the husband, and it sounds like a party  he's going to have while I'm gone...

So what did I make?  Low-cal Japanese chicken was the name, but it seemed pretty "normal" to me.  I paired it with some Jasmine rice and yummy sushi (purchased from our fave Asian place, Asia Bistro) and all was good:)  The chicken was a little bland, but always worth it to try new things, right?

You will need:

  • 3 large chicken breasts, a little over 1 lb total, cut in half
  • 1 cup low fat lemon yogurt
  • 2 tbsp lemon juice
  • 1/4 cup soy sauce
Mix all ingredients together, then coat each chicken piece in the mixture.  Place foil over a 13x9 baking dish and place chicken pieces on the foil.  Place in a cold oven, then set to 425 and cook for 45 minutes.

The chicken ended up with a little bit of a crispness to it, and was definitely juicy, but just alittle bland.  With all that lemon I thought it would have such a nice lemon flavor, but it didn't really...I sure did enjoy my Jasmine rice and sushi though:)

 

  

 


Can anyone recommend any other Japanese recipes I should try?  I really have to learn how to make sushi!

Yum Sushi and Friday Night fun!

Happy Friday night everyone!  I had a great day off - got a ton of cleaning done and some other random stuff...I didn't sit around like I wanted to (at least for a bit), but now I can hopefully do some of that over the weekend:)



Amazing huh!  Well, I didn't make it, but I did order sushi tonight while the husband was out:)  I meant to take a picture of my own crazy maki before I ate it all up, but I forgot...oops!  Next time!  Learning to make sushi is definitely something I'd like to do someday - does anyone know how/has anyone ever tried or taken a class?

Since I didn't cook today (but don't worry, I will be the next 2 days:)), let's have a fun Friday.  How about a survey; get to know CheyCanCook a little better, and then hopefully some of you will copy and paste it so I can get to know you :)  I promise, this foolishness is only for tonight:)  I hope you all enjoyed whatever you made or had out tonight:)  Tomorrow I'll be comin' atcha with an appetizer and a dessert!!

5. If you could live anywhere in the world where would it be?
either somewhere with 75 degree weather a good amount of the time or in the caribbean

Special K Vanilla Almond Cereal

7. What is your favorite cuisine?
chocolate;) no no, I'd say Asian

8. What foods do you dislike?
salad dressing, mayonnaise, green spices (I'm getting better!), sour cream

depends on my mood - my own cooking, La Cantina, Chateau, any Chinese/Sushi Place, Mamma Lisa's Pizza, and TGI Friday's;)

none - I like my salad dry:)

comfy clothes!!

Back to Paris, China, Japan, Australia, New Zealand, all 50 states, South Africa, Morocco, you get it;)

somewhere warm - near the ocean

When I first lay down in the bed and stretch out at night and whatever time it's time to get out of work:); Also when the husband gets home

baseball, gymnastics, figure skating - anything during the Olympics!

Cinnamon - you can use it in so much!

Crazy Maki - it's tempura shrimp, salmon, tuna, avocado, and cucumber!

everyone!

not really

night

I don't think so - I guess I just am excited to tell people I have a blog:)

pistacio, choc chip cookie dough, maple walnut, or this coconut almond one at the farm in sherborn!

Booked a vacation on a random Sunday...not that spontaneous I guess...I don't know...

The cleanup!  I try to do some of the dishes as I go along/things are cooking so that way the husband doesn't have so many to do:)

blueberry iced coffee (rarely) - I'm more of a tea or hot chocolate person:)
