Oh, Red Sox...

No blog last night...too distraught by those silly Red Sox!!  Seriously, worst September I can ever remember!  My facebook status even said, "Dear Lorena, I'm so sorry that your first season watching the Red Sox ended so painfully...I guess our extra Take Me Out to the Ballgame during tubby time didnt help...Don't worry, next year will be better. Love, Mama"  ;)  Ugh...


Anyways, tonight's meal surely took our mind off the Sox, at least for a little while:)  I had never made this meal before, but knew it was something I could definitely pull off with baby in tow!  Easy ingredients, and made the house smell wonderful all day long!


Sweet and Sour Chicken - crockpot!


  • 1-1.5 lbs boneless chicken thighs, cut into bite-sized pieces
  • 1 carrot, sliced
  • 1 celery stalk, sliced
  • 1 onion, sliced
  • 1/3 cup brown sugar, packed
  • 1/4 cup soy sauce
  • 1/3 cup Catalina dressing
  • 1 tsp ground ginger
  • 1 can pineapple - pieces and juice both
  • 1 each red and green pepper, sliced
  • Extras - water chestnuts, pea pods, etc
Place onion, celery, and carrots on bottom of crockpot.  Place chicken on top of veggies.  Stir together brown sugar, soy sauce, dressing, and ginger and pour over chicken.  Cook on low 7-8 hours.  After the 7-8 hours has elapsed, add peppers, pineapple with juice, and any extras (I added water chestnuts) and cook on high 30-45 minutes longer.  Serve with rice and enjoy!


See how short that paragraph is??  That is how easy this is!  My husband loved it, so we'll be making this again very soon!  Only wish I had added cashews!  Next time!

Now, my fave C food - so hard...chocolate or cheese, chocolate or cheese??...how about chocolate covered cheese!!

I hate the dentist

I don't even know why, I've never had any kind of traumatic experience that I can remember, just the thought of someone in my mouth, ugh...anyways....

I'm sure my husband was relieved that I could eat, and therefore still was making dinner after my appointment:)  Buffalo chicken pizza, sorry no picture again...I seriously need a sticky note!  Buffalo chicken pizza, the cheated way...Archer Farms frozen buffalo chicken which are actually so good, a Boboli wheat pizza crust, some sauce and cheese, and there you go!  Baby wants/needs to eat b/w 5:30-6, husband home after that, equals craziness at dinner time!  Anyone else go through that?  I love family dinners at the table, altogether, with the baby chattering away at us:)

B:  blueberries!  Pancakes, muffins, bread, anything!  Especially banana blueberry nut muffins!

Am I back for real this time??

Hi, everyone!  I thought a lot about my blog and I really am going to try to "be back" for real this time:)  Taking care of Lo is very time consuming, but the older she gets (she's 9 months now, it's flown by!) the more fun it gets:)  But, I realize I need to do some stuff that I enjoy too, like my blog:)  I apologize in advance if I talk about cooking/baking a little and baby alot;)

So, for my first entry back, let's see....today Lo tried pancakes and garlic bread for the first time...not together of course.



I also tried a new spin on my chicken parm recipe, sandwiching it with garlic bread and topping it with parmesan cheese - yum!  Of course, b/c I'm out of the blog frame of mind, I forgot to take a picture; oops!

Hmm...and for fun, what's your favorite food beginning with every letter of the alphabet??

A:  avocados!  Love guacamole!

I'll be more interesting tomorrow...for now, back to my to-do list!
