Gimme that ... fish taco...gimme that fish, woo!

Hi all!  Sorry to be a little MIA!!  With some wonderful weather, long hours at work, house hunting, and having much needed relaxation time with the babe/husband (same person;)) last night, I've gotten a little behind!  I believe it to be very much worth it, though:)  It is considered relaxation time when you're watching The Pacific together and it's all about war and very intense?  I think so:)  I love this series!  Are you watching it?

So you're probably wondering with all this busy-ness if I've been cooking - of course!  Last night I made fish tacos.  I read a bunch of recipes online, but kinda just threw together what I thought would work.  And it did!  I was so proud of myself for just winging it:)  They were very quick to make too, which was great since we ate dinner at about 8:30:) 

You will need:

  • 1 pound fresh cod loin
  • 1 pkg taco seasoning - I know, I know, I could make it myself, but again this was 8pm at night!
  • 1/3 cup water
  • 1/3 cup each chopped red onion, purple cabbage, lettuce, and tomatoes
  • 1 avocado, chopped
  • taco sauce
  • tortilla wraps
Heat a fry pan over medium high heat.  Spray with Pam and add fish.  Cook for about 4 minutes on each side, until it starts to flake, pretty much crumbling at the touch.  Add the taco seasoning and water and let sizzle/cook together for about 10 minutes, until almost all of the water has evaporated.  Top with your favorite taco toppings...that go with fish...and enjoy! 



And of course we paired it with our non-healthy Friday night treat, nachos with that is it fake or not Tostitos spicy cheese, yum!


Yum.  I love making Mexican food, it's my fave for sure.  Do you have a favorite "cuisine" to make? 

So we've had a super busy day, up and at em since early on, and it's continuing with Easter Vigil and dinner out tonight.  I'm "hoping," if I don't get too distracted by the nice weather or my DVR, that I'll get the switching of the winter to spring clothes done and the frosting for my cupcakes for tomorrow - wish me luck!

Sshhh - don't tell anyone but sometimes I like the fake cheese on nachos too.

I love Mexican food too. And you can beat nachos. Yum!
We spent a nice Easter in San Diego complete with a rolling earthquake. Oh the joys of Southern Cali.

yummy - eek about that earthquake, and it's scary to hear on the news about the aftershocks you keep getting! hope you're all safe!
